Leiths School of Food and Wine in London has an international reputation as a first class culinary institute for chefs. Leiths School has close links with some of the UK’s top restaurants, which provide the students with work experience, and many successful graduates go on to work for them. Leiths List is the School’s successful employment agency which also provides career advice for students, and Leiths Food Solutions is aimed at helping chefs, owners and operators to grow their businesses.

Holiday and part time courses provide scope for interested amateurs of all ages and specialist courses are taken by professional and enthusiastic home cooks alike. Tailored programmes or demonstrations are devised for companies or groups and private cookery lessons are also available.

Leiths many cookery books, published by Bloomsbury, are produced at the School, with recipes devised, tested and tasted by the teachers. The curriculum and course work are taken from Leiths Cookery Bible (written by Prue Leith and Caroline Waldegrave) and Leiths Techniques Bible. Recipes are constantly being developed at the School and are introduced into the curriculum throughout the year.

LEITHS KITCHEN WIZARD APP

The Leiths Kitchen Wizard is like a having a Leiths Chef looking over your shoulder in the kitchen. This handy tool will help you to convert weights, volume and temperatures into a usable format; calculate cooking times for any roast; understand classic cooking terms, and test your foodie knowledge with a fun cookery quiz. There are even a series of timed recipes so that you can serve the perfect roast with all the trimmings on time, or host a simple mid-week supper following our step-by-step instructions.

  1. Glossary of Cooking Terms:
    In order to become a confident cook, it helps to understand frequently used cookery terms and techniques. Our glossary offers clear, simple explanations of classic cookery terms and techniques. It will be frequently updated and we are open to suggestions.

  2. Converter Tables:
    Convert weights, volume and temperatures into a usable format. The cup converter allows you to follow any recipe using just a cup measure so that you can bake that birthday cake even when the scales are broken. It even includes a roasting table so that you can easily calculate cooking times for anything from roast beef to roast partridge.

  3. Timed Recipes:
    Cookery is all about timing. The Leiths time-plan technique helps you to cook through a menu in a logical order and get the food on the table on time. Helpful alerts will remind you when to check your dish and notify you when it is cooked; you can even plan and input when you want to serve your food and the timer will suggest when you need to start cooking. If you are confident enough to cook without the timed help, then simply enjoy cooking our delicious selection of roasts and simple supper menus. Further recipes will be added throughout the year.

  4. Leiths Quiz:
    Think you know how to cook? Test your knowledge with our quiz, designed to be both fun and informative. Test yourself against foodie friends and find out who really knows the most. About the authors

Claire Macdonald trained at Leiths before gaining experience in the restaurant world. Finding that her true passion was for teaching, Claire returned to Leiths. She has been Principal of the school since 2007. Claire lives in central London.

Jenny Stringer trained at Leiths and was a private chef to HRH The Prince of Wales, cooking at Highgrove, St James’s Palace and the Royal Yacht before returning to Leiths as a teacher. She was the Principal of the school for 5 years, then returned as Deputy Managing Director in 2010. Jenny co-authored Leiths Simple Cookery, published in 2007. Jenny lives in Bromley with her husband and two sons.

Camilla Schneideman, a graduate of Leiths School of Food and Wine, worked in restaurants before establishing the successful Café Divertimenti, Divertimenti Cookery School and the Lemon Tree Cookery School. Camilla is the author of The Divertimenti Cookbook, published in 2007. She returned to Leiths as Managing Director in 2008. Camilla lives in Acton with her husband and two children. Camilla is the General Editor of Leiths How to Cook.

Intermediate Certificate in Food and Wine

This one term winter course is a professional cookery course suited to those with a sound knowledge of cooking who wish to improve their skills. It is also suitable for experienced cooks who lack formal training but wish to learn classical cooking methods to create contemporary dishes. Students completing the Intermediate Certificate will be proficient cooks, able to enter into a professional catering environment. This is also the second term of the three term Diploma.
